These pancakes…I don’t even know where to start. They’re glorious. Autumnal. The epitome of a relaxing weekend breakfast (though I’d be happy to eat them any day of the week!). Sweetly spiced and fragrant. Delightfully delectable and decadent. They just about melt in your mouth. I wish there were a way to make an electronic scratch-and-sniff sticker, but since there isn’t, you’ll just have to take my word for it and make these phenomenal pancakes yourself.
I found them so moist and full of flavor that I skipped syrup entirely. My boyfriend, however, topped his with maple syrup, and the happy “nom nom nom” noises coming from his side of table indicate that either way, these pancakes = winning.
- 1 scant cup milk
- 1 tablespoon lemon juice
- 1 egg
- 1 cup flour
- 3/4 cup cooked pumpkin
- 1 tablespoon brown sugar
- 1/2 teaspoon pumpkin pie spice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 3 bananas, thinly sliced
- 2 tablespoons butter
- 1/4 cup brown sugar
- chopped walnuts (optional)
- maple syrup (optional)
- Put one tablespoon lemon juice in a one-cup measuring cup and fill remainder with milk. Let sit 5 minutes.
- Using a whisk, beat egg in medium mixing bowl. Add remaining pancake ingredients in order, whisking in between each ingredient.
- Spray a griddle or nonstick skillet with cooking spray. Heat on medium heat for several minutes, or until water dropped onto surface sizzles. While griddle is heating up, melt 2 tablespoons butter and mix with 1/4 cup brown sugar.
- With a 1/4 cup measuring cup, scoop pancake batter onto griddle. Carefully arrange banana slices on top and brush or drizzle with butter and brown sugar mixture. When bubbles appear throughout each pancake, flip onto other side and cook 1-2 more minutes.
- Serve, and garnish with chopped walnuts, any remaining banana slices, and maple syrup as desired.
