Last week, we celebrated Phoebe’s first “adoptiversary,” and I baked her a little cake of her very own. I know it might seem a bit silly, since of course, she has no concept of any given date being of special significance, but I’ve always had a knack for remembering certain days as the anniversaries of big moments. Adopting a puppy was a huge step for me, and one that I had been looking forward to and thinking about for nearly five years.
Raising a puppy is no small task – and many thanks to my boyfriend who has been here to help out since day one – but I couldn’t be happier that I decided to take the plunge and adopt her, because Phoebe has brought so much joy and laughter to our lives over the past year that it’s hard to imagine not having her with us. That’s really what celebrating Phoebe’s “adoptiversary” is about, in my book: taking a moment to reflect upon how the addition of a furry family member has changed us and our lives, and to appreciate her for the bouncing bundle of positive energy that she is. Happy Adoptiversary, Phoebe, and here’s to many more years of laughs and puppy snuggles!
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 cup peanut butter
- 1/4 cup vegetable oil
- 1/4 cup honey
- 1/4 cup unsweetened applesauce
- 1 cup grated carrots (about 3-4 medium carrots)
- 1 egg, beaten
- 8 ounces firm tofu
- 1/4 cup peanut butter
- Preheat the oven to 350 degrees. Grease and flour 4 3-inch ramekins, and set aside.
- In a microwave-safe bowl, microwave the peanut butter and honey for a few seconds until softened and slightly melty.
- In a medium mixing bowl, combine softened peanut butter and honey with the remaining cake ingredients and stir until fully combined.
- Portion batter into the four prepared ramekins and smooth the tops with an offset spatula. Bake for 20-25 minutes, or until an inserted toothpick comes out clean. Let cool completely before frosting.
- For the frosting: in a blender or food processor, process tofu until it has a frosting-like consistency. Add peanut butter and blend until smooth. Frost cakes with an offset spatula. If the tops of the cakes became rounded while baking, you may want to use a sharp knife to slice off the rounded portion before frosting.
- Makes 2 mini two-layer cakes.

Ok, I obviously love this post. Phoebe is precious. We just celebrated Seymour’s birthday (we don’t really know when that is–we should probably switch it to an adoptiversary). My mom actually sent him A CARD in a care package with treats and a chew toy. It was adorable.
