I have grown particularly fond of quinoa this summer. It seems like the perfect food for hot and humid weather, since it tastes great served at any temperature, goes well with a myriad of fresh fruits and vegetables, and doesn’t weigh you down like many summertime classics do (think hamburgers or hearty potato salads). This quinoa salad has become one of my favorites. The jalapeños and cilantro add a bit of spiciness; the peaches, sweetness; and the walnuts, crunch.
Vegan Barbecue Quinoa Salad with Peaches, Corn, and Tomatoes

Ingredients
- 1 cup uncooked quinoa
Corn and jalapeño mixture
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 & 1/2 cups corn
- 2 jalapeños, seeded and chopped finely
Dressing
- 1/2 cup barbecue sauce
- 1/8 cup silken tofu
- 2 tablespoons olive oil
- 3 tablespoons fresh lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons water
Add-ins
- 2 peaches, diced
- 1 large tomato, diced (or 1 cup of grape tomatoes, halved)
- 3 green onions, chopped finely
- 1/2 cup chopped walnuts
- 3 tablespoons fresh cilantro, chopped
Instructions
- Preheat oven to 450 degrees. Stir together olive oil, paprika, chili powder, garlic powder, salt, and pepper in a small bowl. In another bowl, combine chopped jalapeños and corn. Pour in oil and spice mixture and toss to coat. Spread in a single layer on a baking sheet and bake for 10 minutes, or until corn starts to brown. Let cool 5 minutes.
- Cook quinoa according to directions on package.
- In a food processor or blender, combine barbecue sauce, silken tofu, olive oil, lime juice, water, salt, and pepper. Pulse until smooth.
- In a large bowl, mix quinoa with 1/3 cup of dressing. Stir in corn and jalapeños. Add peaches, tomatoes, green onions, and walnuts.
- Optional garnish: drizzle remaining dressing and sprinkle cilantro on top.
Notes
- Serves 4 for a light dinner; 6 for a side dish.
